01 - Preheat oven to 350°F. Grease a 9×9 inch baking dish with butter or nonstick cooking spray.

03 - In a separate bowl, whisk the eggs, milk, maple syrup or honey, vanilla extract, unsweetened applesauce, and melted coconut oil until smooth and well blended.
04 - Pour the wet ingredient mixture into the dry ingredients and stir gently until just combined. Avoid overmixing.
05 - Gently fold in the grated carrots, chopped nuts, raisins, and shredded coconut until evenly dispersed throughout the batter.
06 - Pour the mixture into the prepared baking dish and spread evenly. Smooth the surface with a spatula for uniform baking.
07 - Bake for 35 to 40 minutes, or until the top is golden brown and the center is fully set. A toothpick inserted in the middle should come out clean.
