# What You Need:

→ Fruit & Juice

01 - 2 cups fresh pineapple chunks
02 - 1/4 cup fresh lime juice

→ Coconut Mixture

03 - 1 cup full-fat coconut milk
04 - 1/4 cup coconut cream
05 - 3 tbsp maple syrup or honey
06 - 1 tsp grated lime zest

# How-To Steps:

01 - Combine pineapple chunks and lime juice in a blender. Blend until completely smooth, then set aside.
02 - Whisk together coconut milk, coconut cream, maple syrup or honey, and lime zest in a separate bowl until well combined.
03 - Alternate spooning or pouring layers of pineapple puree and coconut mixture into popsicle molds. Use a skewer or thin knife to gently swirl the layers for a marbled effect if desired.
04 - Insert popsicle sticks and freeze for at least 4 hours, or until fully solid.
05 - Briefly run the outside of the popsicle molds under warm water, then carefully remove popsicles.
06 - Serve immediately and enjoy.

# Expert Hints:

01 -
  • It strikes the perfect balance between creamy coconut and tangy fruit.
  • The marbled look makes you look like a pro pastry chef with zero effort.
02 -
  • Filling molds too full will make a mess when you add the sticks.
  • Warm water is the only safe way to get them out without snapping the stick.
03 -
  • Make sure your can of coconut milk is shaken very well to avoid clumps.
  • Use very ripe pineapple for the best natural flavor.
